It's a perfect meal for nights when you don't want take-out but don't have anything inspiring in the kitchen. We have a lot of those nights around here.... I do this a lot. I grew up in a Latin family and Sundays were often dedicated to a big pot of brothy black beans with eggs poached right in the garlicky liquid. I love it (and so pretty!)
