Yup, I’m a fan of vegetables and Sundays, though sometimes I wish the two weren’t so extricably linked for me. I’ve got a lot on my plate this week, so my trip to the farmer’s market was slightly less relaxing than usual. That said, this week’s shopping post (to be followed closely by a new recipe) will be brief.
If you look closely you’ll see that it’s not only veg up there: I’ve snuck a bunch of daffodils into today’s photo, too. Not technically a vegetable, but pretty just the same. I’ve got them in a vase by the window, bringing a bit of life to this cold, dreary day.
Half of that Russian kale was earmarked for today’s lunchtime tart, and delicious it was. Inspired by this recipe my sister posted, I used butternut squash and kale, and I’ll be posting the photos and recipe later in the week.
Almost everything else you see -carrots, leeks, celery- was purchased for a soup which I’ll be making later in the week. I’m reviewing something a little different on Kitchlit this week, and this recipe, for a Provençal-style pistou soup, jumped out at me as something I just had to make. It also uses a good amount of potatoes, onions and parsley, which were purchased but not pictured.
Other than that, I’ve got no concrete cooking plans for the week ahead, though I have promised Andrew we’ll make these quesadillas one day. I’ll have to come up with something to do with the rest of that kale and celery, though- any ideas?
