Reluctant Easter Veg

Reluctant Easter Veg

Happy Easter! I hope your day has been better than mine- I’m feeling a little er, fragile today. I’m not sure whether it was something I ate or a wee bout of flu, but I spent a good chunk of last night running back and forth to the washroom, sick to my stomach. As a result food has been pretty far from my mind today, making me a rather reluctant visitor to the farmer’s market.

Still, I figured that I’d feel better eventually, so I should at least try to buy of couple items. The celery and carrots might go toward a final pot of Slow-Baked Beans with Maple Syrup. The nights can still be cool here, and I figure it’s my last chance to enjoy such a hearty treat before summer well and truly arrives.

I rarely buy new potatoes like the ones here, but these were just so cute and fresh-looking that I couldn’t resist. If it’s cold out I might roast them up with some rosemary and sea salt, or mix them with some bright lemon zest if it’s more Spring-like. They’re also surprisingly great on pizza, if I’m in the mood for a carb-fest.

The little treat bottom right is a sticky date bar. I love these things, but have never made any myself. This one was bought a) in case I felt like breaking my fast later in the day (I did), and b) for research purposes. Perhaps I’ll have to get out my baking gear and attempt a version.

What’s happening in your kitchen today and this week? Any special Easter plans?

I hope you feel better soon, it always feels much worse when you are ill on a bank holiday!

Food this week will probably be some Slow Baked Beans aswell, I am also hoping I will be able to squeeze in some baking.

    Get well soon, x.
