Where on earth does the time go? Over a week without posting here- oops! I didn’t intend for that to happen, though I knew last week would be busy, what with starting a new job and schoolwork piling up (and no, I don’t mean just baking for my classmates). Yes, it’s really me. I’ve been ignoring this space due to those twin drains on my time, work and school, but I’m still kicking. Unfortunately, my “foodie life” has been suffering somewhat. Meals over the last couple weeks have tended toward quick and easy, and baking has been thin on the ground. Some recipes are just meant to find us.
When I borrowed my sister’s copy of Red Velvet & Chocolate Heartache, the “healthy cake” cookbook I reviewed the other day, she informed me that she’d “decided” I should make this recipe: Sunken Apricot and Almond Cake. Seeing that it called for tinned apricot halves, I immediately rejected the idea (if there’s anything I dislike more than cooked fruit, it’s canned fruit).
