Re-emerging: Almond Biscotti

Yes, it’s really me. I’ve been ignoring this space due to those twin drains on my time, work and school, but I’m still kicking. Unfortunately, my “foodie life” has been suffering somewhat. In a week’s time, I’ll be flying home to Canada to attend the wedding of a very dear friend. I’ve known Margaux since we were 14 years old, and not only is she talented, sweet and beautiful, but she’s extremely organized, and I’ve no doubts that she’ll throw a damned good party. For obvious reasons, I’m incredibly excited about this trip- I get to see my friends from high school, watch one of them get hitched, hang out with my parents and generally soak up the hometown love. It’s been cold in the UK this winter. Cold and snowy- two things the Brits are definitely not used to. Up and down the country roads are blocked, schools are closed and trains aren’t running. (Semi-successful) Recipe Hack: Toblerone Shortbread Cookies

In Canada, where I grew up, there is a coffee-shop chain called Timothy’s. To be perfectly honest, there is nothing special about their coffee or their stores, and given the choice, I’d almost always choose Bridgehead, Starbucks, or even Tim Horton’s for my cup of coffee. One item on their menu, however, is very special. I don’t remember when I first had one of Timothy’s Toblerone Shortbread Cookies, but I remember thinking that it was possibly the most delicious, indulgent, over-the-top and worth it cookie that I’d ever had, home-baked goods aside.
