Rainy Day Veg
Look, let me explain. Im off on holiday on Thursday, so I didnt want to get too much at the market this week. Before I go away I like to clean out the fridge and the cupboards, so this weeks meals will be using a lot of pantry standbys.
This cupboard cleanout actually started last night, when I made the The Amateur Gourmets Cavatappi with Cannellini Beans and Sundried Tomatoes for dinner. One of my favourite fast pastas, its made entirely out of ingredients that I always have around, and is super-fast to put together.
The green onions will go into one of my many versions of macaroni and cheese. Ive made so many incarnations of this dish I cant keep track of them all, but a favourite uses lots of fresh green onions and strong cheddar. Im thinking this time I might add some coriander and red chili, to make a spicy, faintly Eastern take on the idea.
