Posting on my blogs has been a bit thin lately, due in part to a temperamental internet connection at the end of the week, and in part to a spontaneous day trip to the country yesterday. I was happy to get back to routine today, and head to the market to get some food for the week ahead.
I realize that Im a little low on leafy greens this week. Er, make that entirely bereft; it wasnt until Id left the market that I even noticed this shortcoming, so it wasnt intentional! In fact, I was specifically hunting some Swiss Chard to make Danas delicious-looking Chickpeas and Chard dish, but it wasnt to be.
Instead, I filled up my basket with corn. The two ears I bought last week went down so well that Andrew insisted on doubling that amount today. Weve been roasting it in the oven for a delicious and simple meal; smeared with butter, sprinkled with salt and pepper and wrapped in tin foil, it cooks up in 25 minutes.
The parsnips and carrots went into my Sunday soup of the day, along with some coconut milk, chilies and random things that were lying about. Not the best soup Ive ever made, but it kept us from starving.
I also managed to get my hands on one of the first butternut squashes of the season. Tiny, perfect and destined for my tummy, this makes me so excited. Longtime readers will remember that I have a slight addiction to butternut squash, so Ill have to watch it this year. This one will be enjoyed though, either in a pasta, or perhaps a warm farro salad.
